Chicken and Broccoli Bake–Food that warms you up!!

Its wetter here than an otters pocket so I think for dinner tonight we all deserve something comforting, warm and yummy!!

Chicken and broccoli bake (self titled) is one of my favourite winter dinners, so I thought I would share it with you all. There is enough for about 3-4 servings in this recipe. Its so easy, so if your at a loss for tonight why not give it a go!

You will need:
3 chicken breasts
2 cans of condensed chicken soup
broccoli (depending how much you like)
pasta (again depending how much you like)
breadcrumbs from 3 slices of bread or a pack of fresh crumbs
1 onion
deep baking dish/pyrex
3 saucepans

How to:
Boil the chicken breasts until cooked through, do NOT throw out the water.
Boil the pasta
Boil the broccoli (careful not to overcook)
Chop up the onion
Make your breadcrumbs & mix with the chopped onion.
Cut up the chicken and broccoli
Empty the soup in to the baking dish, and using the water from the chicken fill one can, then empty this can in to the baking dish and mix with the soup.
Add the chicken, pasta and broccoli and stir into the soup.
add the breadcrumbs to the top of the dish
Cook for about 20 mins @ 180 degrees (Celsius)
et voila!!

Monday was a casual day, so I went for jeggings, boots and a slouchy jumper. My brother laughs every time i wear this cause apparently its ‘something dodgy from the 80s’ but I LOVE IT so p off Rob!!

Outfit of the day: All that glitters is gold..

Since the weekends are the only times I get to wear non worky clothes, I try and dress ‘nicely’ even though some days I would love nothing more than a pair of trackies and a hoody!!

We all know the importance of capturing the precious moments in out lives, and none more precious than the ones you will take on your wedding day.

Cost of an Irish Wedding : For Guests

How much (on average) does your typical wedding cost YOU as a guest?

So we all know I’m a lover of weddings but after speaking with my Dad last week I realised that being invited to weddings can be some peoples worst nightmare, not because they don’t want to go, but because they genuinely can not afford to go.

It’s all very well for me to say (no mortgage/car/worries) ah surely you would scrape it together, but for some people who are living week to week/ month to month it is simply not feasible.

If only we all had one of these!!!

So lets have a quick look at the cost of a wedding for your average couple. I know this will vary but lets do this under the pretence that you have to buy a new dress, shoes, shirt.

Joint costs:
Present: €100 - €150
Hotel: €120
Spending money: €200 

Hair: €15
Suit dry cleaned: €20 
New shirt & tie: €60

Tan: €25
Hair: €25
Dress : €100
Shoes : €40
Bag : €20  

Ladies total: €210
Mens total: €95
Joint total: €470
Total cost: €775

Holy Moses, €775 - i could get a week in Spain for that!! I am shocked, genuinely, now that I have totted this all up. I'm turning that age that my friends are starting to get married, how the hell am I gonna afford them all when they are in full swing. Jesus!!
